Garden Veggie Recipe

One of our gardeners, Linda Murihia Robinson, submitted a recipe she wanted to share with our gardeners at Common Ground. This recipe is from Corporate Executive Chef Paul Griffin from BurgerFi. Candied Tomato-Bacon Jam

1 pound bacon, cut into 1-inch slices 1 ½ cups tomato, diced 1 cup onion, diced 1/3 cup sugar 1 tablespoon salt and pepper ¼ cup water, as needed ¼ cup sherry ½ tablespoon parsley, chopped ½ tablespoon rosemary, chopped

  1. Render the sliced bacon until crisp, set aside.

  2. In the same pan, caramelize the onions until golden brown in the bacon fat.

  3. Add the tomatoes, sugar, water, vinegar, salt and pepper. Stirring constantly, cook on medium heat for 10 minutes to reduce.

  4. Add the bacon and cook for an additional 10 minutes or until the liquid has reduced into a jam-like consistency.

  5. Add herbs, stir.
